My love of Italian Desserts and strong dark Espresso …

2 eggs
1/2 dl sugar
250g mascarpone cheese
2 dl whipping cream
20-30 pcs Savoiardi Italian ladyfingers
2 dl cold strong coffee
1 tbsp Amaretto (optional)
2 tbsp cocoa

Preparation Method:

Prepare strong coffee and let it cool down. Mix Amaretto into it if you choose to use it.

Separate the eggs, whisk the egg yolks with sugar, and then add mascarpone cheese.
Whisk whipping cream and add it to that mixture.
Whisk egg whites and fold it carefully into the mixture.

Take the Savoiardi buscuits and dip each of them quickly into the cold coffee mixture and place them with the dipped side into a deep tray.

When the whole bottom of the tray has been covered with the biscuits, cover it with half of the cream mixture. Top with another layer of Savoiardi biscuits. And top again with the remaining cream mixture.

Sprinkle over cocoa powder.

Place in the fridge for at least 5h, preferebly over night.

Serve cold.

Little tip: You can also make these in small glasses for portion sizes.
